SINUGLAW is a unique dish here in the Philippines. The name is derived from two dishes—which is “sinugba” and “kinilaw”, which fits the dish well because the two dishes are literally combined to make it as one. Sinugba is our local name for a grilled pork belly. While kinilaw is some kind of a raw fish salad that’s mixed with onions, lime, native vinegar and a secret ingredient that we call “tabon-tabon”.
It came to my idea to talk about this dish because I was able to see the most beautifully plated sinuglaw in my entire life. It can be bought at one of the finest restaurant here in the city. I really enjoyed watching the food as it was served to me just this evening. I was even tempted not to eat the dish anymore. I know it was stupid, but because I was starving, I got convinced that it should be eaten. And viola!! It tastes as delicious as it looks!
