Not all carrots are alike! The farther west they’re grown, the sweeter the flavor. And while all carrots are high in beta-carotene (from which the body produces vitamin A) as well as natural sugar, the deeper the orange color, the more beta-carotene for your dollar. Swiss chard, a member of the beet family, looks like spinach. It can be mixed with other torn greens for a salad. Or cook it the same as spinach for its tasty tang. High in potassium and iron, it’s also a good source of vitamins A and C. Refrigerate all vegetables as soon as possible after purchase because most lose vital nutrients when stored at room temperature.
